Haitian Recipe: Diri, Sos Pwa & Legume

If any of you have been down to Haiti before, you are probably very familiar with this classic Haitian meal. Diri – rice, sos pwa – bean sauce, and legume – vegetable stew. This is generally a very hearty meal and keeps you filled. Each family’s legume recipe varies as there are numerous ways and ingredients you can use. For instance, many families use stewed beef as their source of meat protein, however you can easily trade in goat or pork shoulder. The mashed mixture also has multiple variations of eggplant, cabbage, chayote, spinach, water cress or other vegetables, depending on what you have in your house. Sos pwa is generally made the same way and is a great way to introduce protein into your diet. Here are some pictures of our cook making this delicious Haitian meal:

    One year I made diri et sos pwa for a family style lunch at our small homeschool co-op. It was a great hit! I made legume before but it is nowhere near as good as in America. The only think missing from this feast is maiz moulin!
