WHAT IS MAYI MOULEN?
Mayi moulen is a staple food from Haiti based on ground corn. In Haitian Creole, mayi moulen simply means ground corn.
HOW TO PREPARE MAYI MOULEN
Mayi moulen is very simple to prepare, first you must wash the corn in a bit of water. Then add oil and garlic to a pot. Add the water, salt and chicken bouillon cube.
As soon as the water starts to boil, it is time to add the cornmeal. It can be more or less fine and more or less coarse, contain grain or not. It is important to mix well to avoid the formation of lumps. It will then thicken in the water and become compact. Simply mix it regularly with a wooden spoon and let it cook for 25 to 40 minutes depending on the grind.
After it is cooked, it is important to cover the pan to prevent the cornmeal from drying out. To keep a creamy texture, simply add water as you cook to avoid having a too compact mayi moulen.
At the end of cooking, fresh butter can also be added to make it even creamier. It can be served hot with fish, avocado, red sauce or black bean sauce.
