Labouyi Recipe

Ingredients:

  • Oatmeal
  • spices (like cinnamon or nutmeg)
  • Milk
  • A pinch of salt
  • Sugar (to taste)

Preparation:

  1. Ensure your pot is clean.
  2. Fill the pot with water.
  3. Wash the mild spices and add them to the water.
  4. Soak and wash the oats
  5. Add the oats and a pinch of salt.
  6. Place the pot on the stove and let it boil until the oata arae fully cooked.
  7. Once it is well boiled, add the milk and cook for another 2 minutes.
  8. Your labouyi is ready to serve. Add sugar to your taste.

Variation for a Smoother Texture

If you prefer a smoother texture without the oat flakes, here’s a variation:

Filtering:

  1. After cooking the oatmeal, pass the mixture through a strainer to remove the flake pieces.
  2. Collect the filtered oat water and discard the flakes.
  3. Put the oat water back into the pot, heat for a few more minutes, then add the milk.
  4. Remove from the heat and serve your labouyi. Add sugar according to your preference.
