This post is an update to the post on May 15th. We had an education class for type 2 diabetes a few weeks ago. We went over the basics- definition of the disease, pathology, treatment, complications. Patients were very attentive, but did not have much to say until the portion of the class where we talked about diet. Then there were lots of comments and questions. We prepared a double sided laminated sheet that listed serving portions for foods that are common in the Haitian diet and there were also lists of common foods/beverages that a type 2 diabetic should avoid, a list of foods that should rarely be eaten and a list of foods that did not need to be limited. It is very common for an adult Haitian to eat a very large meal once a day- for example 5 cups of cooked rice with some type of sauce. No more than 1 cup of cooked rice was recommended as the portion size for rice during our class. This created quite a bit of comment. But I think that class participants understood the rationale. Or I may just be optimistic. We will see if blood glucose levels are better controlled in class participants over the next few months.
